Frequently Asked Questions

How much do I budget for my cake?

cakes are like snowflakes, no two are alike. the best jumping off point for how much your cake will cost is $6 per guest for a simple cake.  If your cake is something more elaborate with characters, fondant, edible flowers etc, you can expect the price to increase based off of the difficulty and detail.

Why are your cakes more expensive than Costco or a Grocery store?

My mom has a saying: "Don't buy diamonds where you buy bulk toilet paper." I say the same for cakes.  The cakes I make are personalized, customizable, one of a kind and fresh.  A former walmart employee once told me that a Walmart cake will spend up to a year in a freezer before it is even decorated.  Big box stores and grocery stores use products such as fluid flex to keep their cakes moist or longer periods of time.  They are filled with preseritives and chemicals to give them a certain texture and to keep them moist.  My cakes are baked no more than three  days before your event.  All products are the highest quality available and there are no "frankenfoods" involved.  I use cream cheese or a condenced milk soak to keep cakes moist and my buttercream is made with only three ingredients.

Should I store my cake in the refrigerator?

For best results, your cake should be served at room temperature and should be removed from the refrigerator at least 4 hours before serving.  Unless it is particularly hot or the cake has a mousse or whipped cream filling, the cake is safe to sit out at room temperature.

Eating cold cake will cause the cake to seem dry because the butter in the cake is cold.  if you think of trying to spread cold butter on toast, it crumbles and does not spread smoothly. it is the same concept.

What is Swiss Buttercream?

Many of us Americans are used to overly sweet American buttercream that is gritty with powdered sugar and "makes your teeth itch."  I prefer to use a Swiss Buttercream which is made with egg whites, sugar and butter.  This creates a lighter, smoother texture with a more balanced sweet flavor profile.
